Hot Italian Beef Recipe and a Burger Contest for Charity!

Last Friday i received an early birthday present from my wife, a 10” Meat Slicer!

So of course I went and dug through the freezer and found a couple of rump roasts. I seasoned those well with Q-Salt and put them into the Shirley Patio smoker at 200F until they hit 125F internal.

Required topping

The sandwich with homemade pasta salad

Recipe:

  • 2 Rump Roasts (or bottom round, top round, etc), about 3 lbs each

  • Make Herb paste: 2 Tbl Olive Oil, and Italian Herbs (Oregano, Thyme, Sage, Rosemary, Basil)., mix to a paste.

  • Season roasts well with Q-Salt and slather herb paste on them

  • Put in smoker set for 200F

  • Smoke until the meat hits 125F internal

  • Let meat rest for 30 minutes (save any juices!) then put into fridge overnight to cool

  • Once cool, slice very thin with deli slicer

  • In a crockpot (dutch over, Nesco, etc) put 3 cups of beef bone broth, reserved juices and Italian herbs (Oregano, Thyme, Sage, Rosemary, Basil)

  • Put beef slices into broth to reheat

  • Serve with giardiniera on a french roll
