Hot Italian Beef Recipe and a Burger Contest for Charity!

hOT ITALIAN BEEF
Last Friday i received an early birthday present from my wife, a 10” Meat Slicer!
So of course I went and dug through the freezer and found a couple of rump roasts. I seasoned those well with Q-Salt and put them into the Shirley Patio smoker at 200F until they hit 125F internal.
Recipe:
2 Rump Roasts (or bottom round, top round, etc), about 3 lbs each
Make Herb paste: 2 Tbl Olive Oil, and Italian Herbs (Oregano, Thyme, Sage, Rosemary, Basil)., mix to a paste.
Season roasts well with Q-Salt and slather herb paste on them
Put in smoker set for 200F
Smoke until the meat hits 125F internal
Let meat rest for 30 minutes (save any juices!) then put into fridge overnight to cool
Once cool, slice very thin with deli slicer
In a crockpot (dutch over, Nesco, etc) put 3 cups of beef bone broth, reserved juices and Italian herbs (Oregano, Thyme, Sage, Rosemary, Basil)
Put beef slices into broth to reheat
Serve with giardiniera on a french roll
