Fire-roasted Pork Loin & Pineapple

Let’s talk Pork Loin!

Loin comes from the area between the shoulder and the ham, near the backbone.

Center cut chops, (baby) back ribs and loin chops all come from the loin.

This is a 1/2 loin (5lb boneless) and is seasoned with Garlicky Lemon seasoning and cooked to 138F on a rotisserie over live fire.

I also cooked a pineapple that is coated in a Bourbon, butter and brown sugar glaze.

The fire roasted pineapple was made into a pineapple, cilantro salsa that was served with the pork and rice.
